The salad rolls at Pho Binh Minh are nice and big, but the real star of the show is the excellent peanut sauce.

Unlike many other seafood hu tieu noodle soups, this one (named for the Chinatown area of Saigon, and is described on the menu as a Saigon rice noodle soup) actually focuses more on herbal and vegetal flavors.
